- It's 1 of large piece raw arrow root.
- You need 3 cups of water.

I have never seen this served anywhere else but at my Mothers, so I've thought that my Mother is the only one that stews nduma (arrow root/taro root/magimbi). Then two months I was talking about it with Juliet — turns out her Mother makes it too and she loves it!
Boiled arrow roots (NDUMA) instructions
- Start by peeling the arrow roots, and rinse properly with water then place in a cooking pot..
- Pour 1 a cup of water inside the pot placed in a moderate source of heat..
- Sprinkle the salt to taste on top, cover the pot with a lid and let it cook for about 35 minutes..
- You can now remove it from the heat while still hot, serve it with tea or your favorite meat stew..
But when I finally did, I can not have enough. Nduma are what we Kenyans refer to arrow roots. They are super duper nutritious and taste so good. Thank God I got over my senseless fear,LOL. At home we usually just have them boiled.
