- You need 2 cup of All-Purpose Batter mix/flower.
- Prepare 2 of Eggs.
- It's 6 tbsp of Milk.
- You need 2 tsp of Cumin; ground.
- It's 1 tsp of Cayenne Pepper.
- You need 1/4 tsp of Salt.
- It's 1/2 tsp of Garlic Powder.
- You need 1 tsp of Old Bay seasoning.
- It's 1 of Tortillas.
- You need 1 of Cheese.

- Put all Crema ingredients in a blender or food processor and blend well..
- Preheat fryer to 320°.
- Add Milk and Eggs to a large bowl and mix well.
- In another large bowl mix Batter/Flower with the Cumin, Cayenne pepper, Salt, Garlic powder, and Old Bay seasoning.
- Cut the fish fillets in half; Batter by dipping in the Egg and Milk mixture, then in dry Batter mix or Flower.
- Put the Fillets into the fryer when ready (about 6 at a time depending on the fryer size) and cook about 6 minutes, or until the fish floats and is flaky and tender..
