Peeled arrow roots and chop into medium size pieces. Then put in a pot (Sufuria) and add water to the level of the arrowroots (ndumas). If it is still hard to add more water and continue cooking until soft. Arrowroot is a starch obtained from the rhizomes (rootstock) of several tropical plants, traditionally Maranta arundinacea, but also Florida arrowroot from Zamia integrifolia, and tapioca from cassava (Manihot esculenta), which is often labelled as arrowroot.
