  1. Prepare 5-10 of flounder fillets cut into strips or catfish, any white fish.
  2. You need 2 cups of corn meal.
  3. Prepare 2 cups of flour.
  4. Prepare 2 of eggs, beaten.
  5. You need 2 tbsp of yellow mustard.
  6. You need 1/2 cup of hot sauce.
  7. It's 2 tbsp of old bay seasoning.
  8. You need 1 tsp of black pepper.
  9. It's 1 tbsp of garlic powder.
  10. It's 1 tbsp of onion powder.
  11. You need 1 tbsp of paprika.
  12. You need of Lemon to serve.
  13. You need of Cooking oil.

  1. Rinse fish and pay dry.
  2. Slice fish in half to get long strips.
  3. Place fish in large bowl.
  4. Heat oil in large pan over medium heat. Not filling more than half way with the oil..
  5. Mix seasoning blend and set aside.
  6. In a freezer bag add cornmeal and flour and 2 tbsp of seasoning blend. Mix well..
  7. Add remaining seasoning blend and hot sauce, eggs and mustard to fish bowl. Mix well..
  8. Once oil is ready place a few strips of fish into corn/flour and shake well to coat..
  9. Remove excess flour from fish by lightly shaking when removing it from the bag..
  10. Place fish in pan and fry for 4-5 mins per side..
  11. Don't crowd the pan. Repeat until all fish is cooked..
  12. Drain on napkin. Sprinkle a pinch more Old Bay on the top of fish when they come out (optional) serve with lemon wedges and hot sauce..
